- 2 red chili peppers, sliced

- 2 green chili peppers, sliced

- 2 shallots, sliced

- 1 inch piece of ginger, minced

- 1 lb boneless chicken breast, sliced

- 3 cups chicken broth

- 3 tbsp fish sauce

- 2 tsp brown sugar

- 1 tsp salt

- 1 can coconut milk

- Fresh cilantro, for garnish

Instructions:

1. In a large pot, heat some oil over medium-high heat.

2. Add in the lemongrass, kaffir lime leaves, garlic, chili peppers, shallots, and ginger. Stir-fry for a minute or so.

3. Next, add in the chicken and cook until it is no longer pink.

4. Pour in the chicken broth, and bring to a boil. Then, stir in the fish sauce, brown sugar, and salt.

5. Lastly, add in the coconut milk and lime juice. Simmer for a few minutes.

6. Garnish with some fresh cilantro and you're done!

This dish is not for the faint of heart. It's spicy and rich, but oh so delicious! The combination of lemongrass, kaffir lime, and coconut milk is the perfect balance of flavors. Serve it up with some jasmine rice and you'll have yourself a feast fit for a king!
