Ingredients:

For the marinade:

  • 5 shallots, chopped
  • 5 cloves of garlic, minced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1 tsp sugar
  • 3 tbsp tamarind paste
  • 1 tbsp water

For the fish:

  • 1 whole fish, cleaned and gutted
  • 1 bunch of kunyit leaves (turmeric leaves)
  • Banana leaves, for wrapping

Instructions:

1. Preheat your grill or oven to 200°C.

2. In a mixing bowl, combine all the marinade ingredients and mix well.

3. Rub the marinade all over the fish, making sure to coat it evenly inside and out.

4. Stuff the kunyit leaves inside the fish cavity and wrap the whole fish in banana leaves.

5. Grill the fish for about 25-30 minutes, or until the flesh is cooked through and the skin is slightly charred.

6. Serve hot with steamed rice and your favourite sambal sauce.
